I’ve got the Projects table
Type of binding Many (Projects) To Many (Contacts)
How do I get the table Contacts to be in the Hide state by default and the Open Record icon to be hidden?

I am afraid that this functionality is not available.
When records are already selected, we want to how as much as possible. That is the main reason to hide the unassigned part. It does not apply when selected records are empty. There is no reason to show as much columns as possible when there is nothing to show.
